We let some bananas sit too long and get a bit overripe. So, there’s only one thing to do then – make banana bread! Here’s Elizabeth’s world-famous recipe, demonstrated by our newest favorite chef.
Mash up 1 cup of overripe bananas (approx. 3).
Add 1 ¾ cups flour to a bowl. Spill an additional ¼ cup flour on the table for good measure.
Add 2 tsp baking powder …
… ¼ tsp baking soda …
… ¾ tsp salt …
… and ¾ cup sugar.
In a separate bowl, beat one egg well.
To the egg, add 1/3 cup canola oil …
… and 1 tsp vanilla.
Stir the dry ingredients well …
… and pour in the egg mixture. (“It looks like throw-up, Mommy!”)
Mix well.
Stick your finger in for the obligatory taste test.
Yep, it’s good enough!
Pour the batter into a bread pan …
… making sure to get it all out.
Ready to cook
Yes, another taste test. It still passes inspection.
Taylor, however, finds that plain flour doesn’t taste good at all.
Now put the pan in the oven …
… 400 degrees for 20 minutes …
And there you have it.
Then eat it all up. Preferably warm. Warm fresh banana bread is the best.
